Chef Ben In Kitchen

By now, I think the whole world knows Ben loves Chappati/Roti and he has been pestering me to make Chappati at home but I refused to cook because my bump is getting bigger and I am just too lazy to cook anything. So I told Ben to go ahead if he really wants to make Chappati at home. Actually I was thinking, there are just so many herbs to get and the wheat flour, is a big headache because we will need to travel to Mustafa to get it. Guess what, our smart Ben got his buddy - Saurabh to get all the ingredients for him !

What can I say, he die die wanna make Chappati at home this morning ! Okay, ~~no choice la~~, I brought out my mixing bowl, rolling pin and wash the cutting board ( yeah we didn't even buy the rolling board yet! ).

As for the dirty job - mixing the flour with water, kneading... I'll let him do. Well, not bad I will say, as in, first time making your own chappati from the beginning to the end. Taste? Oh, I was too full to taste it myself but Ben is happy with his Chappati and he said he is going to make again in this afternoon... we'll see... :)

Ben came home around 4pm as he was feeling unwell ( sorethroat & blocked nose )on last Tuesday. So worried that he might be down with H1N1, even Keerthi told him not to come near me but besides going home, where else can wabee go?

With doses of piriton, panadol and bowls of hot barley drinks for 2 days, I was glad he felt better. :)

I told Ben to "look after" the fish while I went for a cold shower. The "condition" of the fish was quite bad actually as Ben kept "flipping it", it was so bad that I have to pour my special tasty gravy onto it before taking photo. How was the taste? Of course it was good!! Still have to thank Ben, for coming home earlier to see me.

Ben wants to eat Pisang Goreng again and so do I...hehee... I am using Amy Beh's Recipe this time, please do not eat the Pisang right a way after frying, I also thought it will be very crispy and shiok but using Amy's recipe, these can only be eaten after 20 minutes ( at least ).

1/2 cup self-raising flour
1/4 cup corn flour

Simple Simple Simple Dinner for Margaret and Ben tonight. I wanted to call it Yi Mian Siu Dai 伊面少底 ( just like our kopi siu dai) because I cut down the oil, salt and sugar usage. Besides, there is no seafood like sotong or prawns, just dry shrimp ( I forgot to buy garlic again!) minced meat, fish cake and chye sim.

Muah Chee 麻芝 - Some families must-have festival dish. Why did I make it today? It is because too much peanut powder (bought extra for cny cookies) and I always wanted to make this as EVERYONE of us loves Muah Chee. Well, I almost failed today as I didn't know it needs to be kneaded ( mum told me to use my kitchenaids mixer) until it is QQ, I thought after steaming, it already looked very QQ to me. hahahaha, thanks mum and dad for helping. >.<
Ingredients A
Shallots : 6 nos. (sliced)
Oil : 5 tbsp

Ingredients B
Glutinous Flour : 300g
Water : 450g
Shallots Oil : 3 tbsp

Ingredients C (finely grinded)
Fried peanut : 250g
Fried white sesame seeds : 50g
Sugar : 100g Method:
1) Heat up oil, fry shallots till golden brown, remove shallots for later use.
2) Mix Ingredients B till well combined
3) Strain into an oil-coated steaming tin
4) Steam over high heat for 45min.
5) Removed, use wooden spoon to stir in one direction till smooth
6) Sprinkle a handful of sugar on top to prevent it from turning dry
7) Sprinkle fried shallots

Yup I am cooking simple dinner tonight. Okay, obviously I do not have any claypot at home and parents are away again. It gives me reason to cook and to mess up the kitchen. Have I ever mention I do not have to clean up after I bake/cook? :) Ben is the world most lovable doting hubby!

Haha...that's the reason why I have not been baking RICH BUTTER CAKE, it was a simple request from Ben and granted!

By the way, these are some of the steps to prepare my very own 腊味香鸡碗仔饭

Preparation :
- cut the onion and marinates the chicken (I use boneless chicken thigh) with some seasoning.
- wash the rice and place them into a bowl with water, the ratio 1 (rice): 1.5 (water)
- wash the vegetable and boil it with some oil and salt, put aside
- cut the chinese saugages and put aside

Start cooking :
- steam the rice until it is half cooked (about 10 minutes)
- after that, put the marinated chicken and chinese sausages together with the rice and cook it at high fire for about 20 minutes, please check if the chicken is cooked
- add an egg if you want to
- serve it with the vegetables

Singapore Fried Carrot Cake

Ingredients
4 radish flour cakes
4 tbs vegetable oil or lard
1 tbs chopped garlic
1 tbs red chilli paste ------ forgot to buy
1 tbs chopped chye poh (salted radish)
2 eggs
1 tbs fish sauce --------- forgot to add
1 stalk fresh spring onion, chopped
5 tbs oil

Method
Heat two tablespoons of oil or lard in a wok. When smoking hot, brown the radish flour cakes, cutting it into small pieces with the spatula as you fry. Push aside the pieces. Heat another table spoon of oil in the wok. Sauté garlic and chye poh till browned. Toss with the radish cake pieces. Make a space in the middle, add the last of the oil and break eggs into the space. Leave to set for a few minutes and then push the radish cake on top. Drizzle with fish sauce, add chilli paste and toss some more to ensure an even mix. Serve hot garnished with spring onion.

Our Pasta with Bacon & Asparatus

-First, cook Thai asparatus in boiling water for 5 minutes.
-At the same time, cook the pasta in boiling water for 6 minutes.
-Heat the wok/pan, add chopped garlic into 3 tbsp of olive oil.
-Stir fry our bacon and pour in a 300gm of Campbell's mushroom soup and another 300gm of water.

We decided to give mum a surprise - To Celebrate Her 56th Birthday, actually not one surprise but TWO!

First, we told her not to cook and our weekend gathering will be over our place on Saturday. Of course, I will be the one cooking. Ben was very kind to accompany me to do some marketing at Cold Storage and NTUC as he knew I can never carry all the bags on my own. Yeah, we took a cab home after that.

What's for dinner? LAKSA!! Eh...don't ask for recipe because I used premix and add other stuff. *come on, one man show leh, use only 4 hours, ok?*

I know I know, no big deal right? This is not the first time cooking dinner for 10 persons, so what's the surprise?

Although it was a failure but mum never complained and she never did, I remember

- Baking numerous non edible stuff and wasted more than 50 eggs, she always says," Try again tomorrow.."

- During my Sec, I was so FAT that I still thought I was a pretty girl, why? Because no one(in the family)ever tease me. Of course now I know I was indeed SUPER DUPER FATTY BOOM BOOM. I was so touch when she told me she will definitely send me to Marie France..

- I SPENT $800 yakking on the phone with an idiot in my Poly 1st year instead of buying myself an air ticket to London but mum didn't scold me.

- I drove our Toyota out without license and banged against the lamp post, causing a big hump at the front and headlight was gone, mum said," you're so daring.." I thought she was going to wallop me! Maybe she would if it is dad's Merz..hahahaha... joking, I didn't get to drive daddy's Merz because I don't have the guts to get a car license after that accident. *chicken la*

Mango Sago

See, we are really busy today..Here is the recipe from Zu's
Ingredients
600gm mango (abt 2 honey mangoes)
400ml mango juice (Peelfresh or any other similar brands)
125ml evaporated milk
80g sago pearls (original uses 300gm pomelo, split into small pieces)
250ml water
2~3 tbsp sugar
1 tbsp cornflour/tapioca starch
1 tbsp water
extra 100ml water

Directions
1. Boil 250ml water and sugar till sugar dissolves.
2. Mix cornflour/tapioca starch with 1 tbsp water and pour into the syrup and stir over low heat until mixture is smooth.
3. Take syrup and cornflour mixture off the heat and leave it to cool.
4. Cut the sides of the mango and cube them.
5. Scrap the remaining mango and put in a bowl, add 100ml of water to blend, put aside.
6. Add blended mango, cubed mango, mango juice and evaporated milk into the syrup solution (from 1) then stir.
7. Add sago pearls and stir, if too thick, add abit of cooled boiled water or more mango juice.
8. Chill before serving.

Preparation of sago pearls
1. Soak sago pearls in water till they turned abit translucent (About an hour)
2. Boil the pearls with water till it turns totally translucent.
3. Pour the cooked pearls into a sieve and wash it with tap water remove the starch and now it's ready to be used

Let's Make Acar !!

Acar aka Pickles - my favourite appetizer ... *slurp*

We don't like Malay styled acar --> too blend

We don't like Peranakan acar --> too strong

We don't like M'sian acar --> turmeric powder?

We don't like Taiwanese acar --> just vinegar

Mum has improvised the recipe and here we have our very own Acar ..
Recipe :
(A)
1 Large spanish turnip (mangkuang)
2 Large cucumber
1/2 pineapple
1 large carrot
3 tbsp of salt
Instruction: cut them into slices. Add salt and mix well. Put a side for approximately 20 minutes. Salt will make them crunchy and you will see quite a lot of water after that, remember to pour them away after the vegetables become softer and make sure they are dry before adding (B).
(B)
6 scallots
6-8 fresh red chili
some sesame
Instruction: Slice the scallots and blend the chili. Heat up your wok and start frying the sesame, followed by scallots and lastly, the chili. DON'T COOK THEM ALL TOGETHER! One after another.
When (B) are ready, add them into (A) and mix well. Don't forget to add in approx. 200gm sugar together with half a bottle of white vinegar. Mum said is ok if add too much sugar, because we can always pour more vinegar. If you think is too sour to your liking, then you can add more sugar. Like I've said before, there is no exact amount of ingredients when come to cooking (for my mum only) so sometimes, you need to taste your cooking using your fingers. Haha..

Hong Kong Styled Chee Cheong fun 猪肠粉 - Failed badly

After the lousy prawn dumpling, here I have terrible CCF. Maybe these days I shouldn't try cooking, I mean shouldn't have cooked when I am not really in the mood. Bad rolls...

Again, nothing is wrong with the recipe, must be the measurement! I think I need a pair of specs..Margaret suggested me to pour everything in and steam it, yeah, like carrot cake.

Recipe extracted from Baking Mum
Ingredients :
150g Rice Flour
1 ½ Tbsp Wheat starch flour
2 Tbsp Corn flour
1 Tbsp Oil
450mls Water
½ tsp Salt

Method :
1. Sift dry ingredients together.
2. Slowly add the water, mixing as you add.
3. Lastly add the oil and salt and mix thoroughly. Set batter aside for at least an hour.
4. Prepare your steamer. Grease a swiss roll pan or any aluminium tray with oil and pour the batter directly on the pan and steam for 5 mins.
5. After steaming, using a plastic scrapper roll the ccf up. If you are using ingredients like char siew or prawns, you can sprinkle it over the steamed ccf and then proceed to roll it up.
6. Place in a plate brushed with a little oil. Continue with the rest of the batter.

Sauce
Ingredients :
1 tbsp oil
2 tbsp sugar
a few slices of ginger (optional)
½ cup water
4 tbsp mushroom flavoured soy sauce or normal light soy sauce
½ to 1 tbsp dark soy sauce

1. Place ginger with oil and sugar in a pot. Cook over small fire until sugar turns brown.
2. When sugar is brown, add in the rest of the ingredients. Cook over medium fire for about 5 mins. Taste the sauce and adjust taste accordingly. If you find the sauce too sweet, you can add in a bit of salt.

Sweet sauce (cwl's recipe)
1/2 cup water
7 tbsp Hoisin sauce
3 tbsp soya sauce
3 tsp dark soya sauce

Mix all ingredients together and cook over medium heat until it thicken slightly.

Crystal Prawn Dumpling 水晶虾饺

This is such a super dupper big failure, think I have to discard all, after eating the filling..hehe..The skin is super thick and chewy, don't get me wrong, the measurement is correct, it was me that lazy to use the weighing machine and everything was like agaration and here I have - lousy prawn dumpling !

Crystal Prawn Dumpling (recipe from BakingMum)

Ingredients for the dough
110 gm wheat starch
220 gm potato starch
160 gm boiling water

Ingredient A
3 water chestnut (minced)

Ingredients for the filling
300 gm fresh prawn
3 gm msg
3 gm salt
6 gm sugar
5 gm potato starch
1 tsp sesame oil

Method
1. Combine filling ingredients until elastic. Add in A.
2 Pour in the boiling water to the dough ingredients until half-cooked. Knead into a dough.
3 Knead dough into a long strip. Divide into equal parts, each 15 gm. Roll into flat round piece.
4. Wrap in 20 gm filling and fold into a har kow shape. Steam over high heat for 5 minutes.

My mummy is a good cook! I am so proud of her and that explained why my weight rose up 72 kg 8 years ago. Thanks to hubby who constantly reminded me that "health is wealth" few years back and I've learnt how to control my diet and most importantly, control the amount of food I consumed, no matter how nice it is. Okay, sorry for digressing, one of mum's signature dish is Hainanese Chicken Rice. As mentioned many times(in my blog) that we are pure Hainanese, how can we not know how to cook authentic chicken rice and make rice balls? We tried the famous chicken rice balls in Malacca but find it too oily and it is not handmade. It is very tedious to prepare as my mummy used her bare hand to roll the steaming hot rice with a little bit pressure to form into ball shaped. After rolling, her palms were all red and sore. Some may ask why must it be steaming hot? "so that the rice will stick onto each other and hold the shape nicely", said mummy.

Margaret has been pestering me to bake something these few days, be it a cake or a kuih. Not only that, she also kept insisting that we had promised her to go shopping at Causeway Point together and dine in at PASTAMANIA. Well, we went there at the end despite much reluctance but we didn't go to Pastamania.

M : OK, then we go home and make pasta tonight?
D : Need to buy minced meat and spaghetti. I am not sure if there is any pasta sauce at home. Don't forget we need to buy mushroom as well.
M : Well, then we bake pizza will do.
D : That's a better idea and much easier as I have flour and yeast at home. Go grab some ham, cheese and tomatoes paste.

We headed home and I start searching for some recipe online and found this from small small baker . There are plenty of recipes online but I choose her as I don't have bread flour at home, well, I have no idea why must it be bread flour as the original recipe for pizza dough use only flour or semolina flour. Anyway, so long as my dough does raise and doesn't collapse, I shall thank her for the recipe!

It has been years since we last cook NASI LEMAK at home. Many thanks to my mummy who helped me to get all the ingredients, cleaned up the kunning fishes, washed and dryed the peanuts and ikan bilis(anchovies) and tied the pandan leaves for the rice. Mostly fried food, easy to prepare and simple to cook, except the sambal chili. I can't share much about the sambal recipe as the some of the ingredients eg. chili powder was given our Indian neighbour whose mummy brought back from Sri Lanka. It is really very tasty !

Ta dah!! We have sunny-side-up egg, fish ball, sambal sotong, kunning fish, fried chicken, otah, peanut and ikan bilis !!

My First Pandan Chiffon Cake

My mood is super good today so I decided to bake something.. Many thanks to LeeLee who shares her recipe online! *Extracted from her blog*

Ingredients:
75 gm plain flour
1 tsp baking powder
75 ml coconut cream/milk
4 egg yolks
5 egg white
100 castor sugar
1.5 tbsp corn oil
1/2 tsp vanilla essence
a pinch of salt
1/2 tsp cream of tartar
1 tsp pandan paste **

Methods:
1. Cream egg yolks, 70 gm of sugar until it is creamy and thick.
2. Add in sifted flour and baking powder, vanilla essence, coconut cream/milk, corn oil, pandan paste into the egg yolk mixture. Use machine to mix it well.
3. In a clean dry bowl, beat eggwhite, remainder 30 gm of sugar, cream of tartar and a pinch of salt until stiff.
4. Mix the eggwhite into the flour mixture and mix it thoroughly using a spatula. Pour into the chiffon pan and bake in a preheated oven at 175C for 45 mins. (My oven doesn't have 175C so I baked it at 170C.)
5. When cake is baked, invert it immediately to cool down for about 10 mins. After 10 mins, use a sharp knife to loosen the side and then the bottom to release the cake. Leave it on a wire rack to cool down further.

Beef cubes! Saw them at AMK hub today while shoppin' with parents. We are hunting for new fridge...

Big side track right? But still need to eat what..

Simple recipe, lazy bum can go supermarket to buy ready made rendang sauce.

Beef in cubes & curry leaves

Stir fried our homemade chilli with rendang sauce

Add curry leaves and stir fried till you can smell the fragrance

Then add in the beef

Stir fried...stir fried...

Add in fresh milk/evaporated milk

Add in little water and let it boils

Transfer into a pot and continue to cook

Using the invertor cooker, I started it with No.6, once boiled, decrease to No.3, 2nd boiled, decrease to No.2.

Can scoop up once it is soften

Peanut Cookies

Ingredients:
250g ground peanut powder(you can use coarse peanut powder)
200g plain flour
1/2 tsp baking powder
100g icing sugar
1/4 tsp salt
100g peanut oil

Egg wash:
1 egg yolk lightly beaten with 1 tsp water

Method:

Combine ground peanut powder, plain flour, baking powder, icing sugar and salt in a big mixing bowl till well mixed

Pour in oil slowly and mix till a pliable dough is formed. May need a little more than the stated amount if the dough is too dry.

Shape into small bite-size pieces. We go by feeling.

Place about 2cm apart on lined baking sheet. Apply egg wash.

Bake at 170C for 18-22 minutes or till golden brown so check your cookies regularly.

Haha, I just recieved my newly ordered cookies cutter..again. I know I know, a bit 败家 but Ben has been asking me to buy this and that, I mean MORE baking tools and even asks me to meet him at Sembawang after work as he knows there is a Phoon Huat there.

Yup, we did go there and SEE what did Ben get me ..2 containers! After getting me MORE baking needs and now he is getting me MORE containers to help me to organise my baking tools.

Ready for sale ~ 350gm for $6 Sinful snack for Chinese New Year, Ben keeps asking me to bake some CNY cookies but I think this cookies look more like Malay Cookies. Here, I bake it using my own recipe as I lost my ex colleague, Rosnani's..Going to bake more for my in laws and siblings.

Okok, I know I am not at China, neither I am a PRC. I also know today is New Year and not Chinese New Year, but who cares? I wanna make some 饺子 today and share with my family, cannot ar? Hahaha...

Parents are away to collect some debt, 没口福咯! Nope, they are not 大耳窿, they just sold their property in KL so they need to go back for few days. Yeah, will come back a bit richer.

*back to topic*I am bit tired to post the recipe, is merely minced meat, some pepper, sesame oil, 韭菜, salt and corn flour. As for the skin, just add hot water into the flour and form a dough. Actually, you can add anything you like for the 饺子, maybe next time I'll use prawn. *wink*

We are a little bit too old to join the crowd in town.
I know I know, we are not that old afterall, just find it difficult to get home if we were to travel all the way to town and I don't really like human jam.

Well, well, back to the topic..
Ben wanted something romantic and knowing that is impossible to get any tables at any restaurants at this moment, we decided to cook something (together) for tonight.

What's for Dinner?

It took me so many hours to prepare our dinner tonight. You never believe me, I started around 2pm! Thank god I managed to cook for Margaret who just had her dinner 10 minutes ago--->yeah, 430pm. Is not funny,k? She has to rush to the bus station and she just can't afford to be late!

Okok. I tried making 煎饼 , that's why it took me so long to come online again. My back starts to ache as I stood for too long. Stamina not good...I'll try to post the recipe again tonight, if Ben didn't cling onto me,ok? Oh I love Friday...

*updates*
Dough: 2 rice cups of Plain flour with 2/3 cups of boiling hot water.

Stir quickily with chopsticks then knead until smooth.*hot hot, see my hand red red* Let rest for 30min.

Filling: 1 bowl Minced meat, lots of 葱 but same portion, 1 onion, some garlic, black sause, pepper.--->stir fried, make sure the filling is DRY.

THEN, flaten the dough and spread little oil and salt before adding filling. Roll it up and cut into small pieces. I used my palm to press them hard together before pan fried.

My 煎饼

酸辣汤 - silken tofu, 3 Tbsp of vinegar (black) & 1 Tbsp for white vinegar, 2 Tbsp of sugar, crab meat *Ben's fav*, beaten egg, 香油, salt to taste. Remember to add corn flour starch before beaten egg.

芹菜, fried with leftover meat from 煎饼

Last but not least, my 腐乳蒸鸡, just marinate the chicken with fremented tofu, can get it for $1 plus from NTUC or other supermarkets. Add chili if you like. *all-time fav*

All right, I am back here bloggin' after fightin' with the wok! I didn't cook the soup for tonight, mum did..I should show this to Ben, maybe he will rush home for dinner!

Big Rave : Fried Fish with Our Homemade Sambal

Char Siew Bao 叉烧包

I wanted to make Pao few days back but forgot to buy the Hong Kong Flour so when mum asked me if I wanna go NTUC this morning, straight a way I asked her," Ma, wanna make pao today?"....Follow my style and this is the simpliest way to your very own 叉烧包!

Ingredients for dough:

300 g. Hong Kong flour
60 g. castor sugar
2 teasp. Instant Yeast
2 teasp. double-action Baking Powder
35 g. Shortening
120-150 mls. water

My "anyhow "Fillings:

250 g. Pork Lean Meat (diced)
1 Onion - diced
1 Tbsp. Oyster sauce
2 Tbsp. Soya Sauce
3 Tbsp. Dark Sauce
1 Tbsp. Seafood Sauce
1 tsp. sesame oil
1 1/2 Tbsp. cornflour )

Some Salt & sugar to taste

Basically I just mix everything (for dough) together, excluding the water.
Then I add water and use a pair of chopsticks act as the mixer ---> I am just too lazy to bring our my mixer *faint*
After that I start to knead until I find it smooth and nice to touch-->not stick
Place it in the mixing bowl, cover with damp cloth and let it raise for 30 min. After reading some mails....
Stir fried the marinated diced meat and let it cool. Divide the dough into a few small ball.
Wrap fillings in the small ball, of course you have to make it flat first and seal tightly.
Place onto greaseproof paper and I FORGOT TO leave to proof for another 30 mins. Straight a way I steam over high heat for 10 mins.

Kuih Talam

The reason for cooking the kuih Talam is because Ben loves them. I forgot to buy the alkaline water so the texture is not very nice but Ben still likes them, I will try to make it again with ALL ingredients, but not any time soon. hehe..Recipe extract from Kuali

For bottom green layer:

(A):
70g rice flour
30g green bean flour
280ml water

(B):
6 pandan leaves cut into 3cm pieces
250ml water
A few drops of green colouring
250g sugar
1/2 tsp alkaline water

For top white layer:

(C):
50g rice flour
1 1/2 tbsp green bean flour
1/2 tsp salt
75ml water
225ml pati santan from 1 coconut

Method:

Mix (A) and leave aside to soak for about 10 to 15 minutes.
Blend (B) in a liquidiser then strain to get the pandan juice.
Mix the pandan juice with (A). Add sugar and colouring.
Cook over low heat and stir continuously with a wooden spoon until batter becomes fairly thick and translucent.
Pour the hot sticky batter into a greased 20cm cake tin.
Smoothen and level the surface with a plastic spatula.
Steam over rapidly boiling water for 20 to 30 minutes.
To prepare the white layer, mix ingredients (C) together and soak for 10 minutes.
Pour the topping layer over the cooked green layer.
Steam for about 10 minutes.
Cool the kuih well.
Slice into small diamond-shaped pieces.

面粉糕

We call it 面粉糕(mee hoon kueh) in hokkien , selling at most hawker centres and food courts, by PRC. Well, don't ask me why.

The noodles is home made by mum:

-all purpose flour + egg + water, knead it and set a side

-fried the anchovies 江鱼仔, left it cold

-marinate sliced pork/chicken, stir fried with mushroom.

Boil the water in a pot, tear the dough into pieces using hand, followed by fresh vegetable.

Serve with anchovies, sliced pork/chicken and mushroom.

I know I know, not in details right, because I didn't cook them. Mum did. I'll try to take more photos next time.

Hong Kong Styled Egg Tart

I have no idea how the egg tart knows today is Deepavali, the consequences for not listening to mum, it leaked..

Simple ingredients! Mum and I always wanna bake egg tarts, I never wanna reveal how many eggs we wasted when we were trying to bake the portugese egg tarts many years back. Now we are back, to bake simple egg tarts first.hehe.. Extract from All Recipe. I ate one right after I showered Twistie, oh yeah, I didn't get to rest after baking as gege was showing me his messy face.

INGREDIENTS
125 g confectioners' sugar
375 g all-purpose flour
225 g butter
1 egg, beaten
1 dash vanilla extract -->forgot to put

Custard
135 g white sugar
355 ml water
9 eggs, beaten --> I used only 7
1 dash vanilla extract --> forgot to put
235 ml canned evaporated milk

DIRECTIONS
In a medium bowl, mix together the confectioners' sugar and flour.

Mix in butter with a fork until it is in small crumbs.

Stir in the egg and vanilla until the mixture forms a dough.

The texture should be slightly moist.

Add more butter if it is too dry, or more flour, if the dough seems greasy.

I then keep it in the fridge for 1/2 hour.

Shape dough into 1 1/2 inch balls, and press the balls into tart molds so that it covers the bottom, and goes up higher than the sides.

Use 2 fingers to shape the edge into an A shape.-->obviously I didn't do it

Preheat the oven to 450 degrees F (230 degrees C).

Combine the white sugar and water in a medium saucepan, and bring to a boil.

Cook until the sugar is dissolved, remove from heat and cool to room temperature.

Strain the eggs through a sieve, and whisk into the sugar mixture. Stir in the evaporated milk and vanilla.

Strain the filling through a sieve, and fill the tart shells.

Bake for 15 to 20 minutes in the preheated oven, until golden brown, and the filling is puffed up a little bit.

Note:
Whole milk will work as a substitute for evaporated milk

Let's do My Cha Cha

I've improvised the recipe according to our taste. I always love this dessert. Mum used to cook them when we were very young. Today I cook it with mum's help. Later in the evening, Nat and Chris are coming over for dinner together with Cheryl. Try to spot the Pikachu mum made for Cheryl~ Oh yah, Ben is working today, I know I know, is DEEPAVALI, even his fellow indians colleagues are in the office "fighting bugs" but tomorrow will be their day off and Ben is going to be a NANNY to Cheryl.

Ingredients:

300g yam (skinned and cubed)

300g orange sweet potatoes (skinned and cubed)

500mls coconut cream

100 g sugar (according to taste)

15 pcs pandan leaves

Many cups of water

For the coloured dough:

200g Tapioca flour

1/2 to 1 cup boiling waterfood colouring

Methods:

Put tapioca flour in a large mixing bowl.

Pour in boiling water.

Mixed it with a spoon till it is well blended.

Separate the dough into two.

Add in food colouring for one dough.

Knead till dough is smooth.

Cut into bite size and drop them in a pot of boiling water.

Once it floats, it is done.

Set a side and make sure they are in cold water.

In a large pot, add pandan leaves and water.

Bring to boil and then add in sugar.

Once sugar dissolved, add yam, sweet potatoes.

Follow by coconut milk.

Bring to a slight boil and add in coloured dough.

Serve either cold or hot.

Fried Maggie Mee

I was still sick but miss my wok after working so I thought of doing some wokking if I could find 2 packets of maggie mee. Thank god I found them and there we had our maggie mee as dinner. Please don't ask me about the recipe, is merely maggie mee and whatever things I could get from the fridge. Oh, this is Ben all time favourite, you can't go wrong as long as you cook this.

Pineapple Fried Rice

Yesterday was a boring, lonely Saturday to me and so I decided to ask Ben out for Japanese Dinner and we ended up cursing and swearing that we would not come back to this Japanese Restaurant anymore. Suddenly I felt like eating Thai Pineapple Fried Rice, Ben and I shopped for the stuff and today we have our Pineapple Fried Rice. Ben even used the remaining fruit to make fresh pineapple juice! Oh...I miss Bangkok!

Carrot Cake 萝卜糕

Ben and mummy loves 萝卜糕 so I decided to learn how to make them. I got the recipe from Lily Wai Sek Hong. Simple recipe and very clear intructions. I forgot to buy tung min flour, 腊肠 and mushrooms, so I replaced with 干贝. I fried some for Ben and Margaret prefers to eat it the healthier way.

Ingredients:
500g radish(白萝卜)
15g tung min flour (澄面粉)
150g rice flour (粘米粉)
20g corn starch (太白粉)
500ml water

2 nos. shallots, sliced
40g dried shrimps
1-2 nos. chinese preserved sausages (腊肠)
4 nos. dried mushrooms
2 tbsp oil, for frying
A little oil for greasing

Seasoning;
1 1/2 tsp salt
1 1/2 tsp sugar
1 tsp sesame oil
Pepper, to taste

Method:
-Shred turnip. Set aside.
-Clean and soak both dried shrimps and dried mushrooms until soften.
-Chop dried shrimps slightly.
-Cut mushrooms into small cubes.
-Cut sausages into small cubes.
-Grease a pan with some oil.
-Place tung min flour, rice flour and corn starch in a mixing bowl.
-Pour water into flours and stir well.
-Heat up 2 tbsp of oil in a pan/wok and fry these ingredients by order ,remove and set aside, first the sausages , then the shallots, lastly dried shrimps.
-Without removing the dried shrimps, add in the mushrooms and then the shredded radish.
-Season with the seasoning ingredients.
-Pour the flour mixture into the pan.
-Cook until the mixture thickens.
-Place the thick batter into the greased pan prepared earlier.
-Steam at high fire for 1 hour.Set aside.
-Slice when turnip cake is cool.
-Cake can be served as is or pan fried and best eaten with chilly sauce.

Karen is such a lovely girl, she bought cakes and many durian puffs for us and her mood was extremely good for the whole week! Fruity Cheesey Cake

Cinnamon Rolls

Fantastic recipe with steps from

VideoJug: How To Make Cinnamon Rolls

Step 1:
Ingredient:
225gm flour
4gm of dry yeast
35gm melted butter
105mls milk
35gm sugar
1 egg
pinch of salt

Filling:
Some cinnamon powder
100gm brown sugar
40gm butter

Step 2:
Begin the dough
Start by adding the flour, the yeast, the sugar, the salt, the eggs, the milk, and the butter into the mixer. Mix the ingredients on low for 5 minutes until it becomes shiny in appearance. Add about 2 Tbsp more of flour to the bowl and turn off mixer. Now scrape the dough from the hook.
Step 3:
Knead and let the dough rise
Put a little flour inside the bowl and also sprinkle some on your work table. Now knead the dough briefly. Add a little more flour to the bowl and sprinkle a little onto the dough. Return the dough to the bowl. Cover it and let it rise for about 1 hour or until it has doubled its size.
Step 4:
Make the filling
While the dough is rising you can place into a bowl the brown sugar, the cinnamon, and the butter and mix with a spoon until combined. Now set it aside.
Step 5:
Preheat oven to 185°C
You can now set the oven to 185 degrees Celsius.
Step 6:
Roll the dough
Punch the air out of the dough. Sprinkle the work space with flour and place the dough on it. Sprinkle the dough with some flour. Now roll out the dough to a 1/2 cm thickness, making sure there is enough flour to prevent it from sticking to the table.
Step 7:
Shape the rolls
You can now spread the filling on the dough. Carefully roll the dough into a log and cut it into slices of about 3 cm in thickness. Place them on the lined baking tray, leaving enough space for the rolls to rise. Allow them to rise for 15-20 minutes.
Step 8:
Wash and bake
Take your egg wash and using your brush, paint each roll individually. Put the tray into the oven and let them bake for 12-15 minutes.
Step 9:
Cool and serve
Remove the tray from the oven and let the rolls cool a bit. Your Cinnamon Rolls are now ready to serve. They can be eaten cold but they taste especially good warm. Try them both ways!

Cinnamon Raising Buns

Step 1:
You will need
· 2 tsp dry yeast
· 120 ml warm milk
· 1 egg
· 15 g butter, room temperature
· a pinch of salt
· 45 g sugar
· 240 g flour
· 70 g currants
· a pinch of cinnamon
· a pinch of allspice

Step 2:
Begin the dough
Into the mixer add the milk, yeast, butter, egg, sugar, flour, cinnamon, allspice, salt and the currants. Mix it together but only until it is just combines. Sprinkle a little flour onto the dough. Remove the bowl from the mixer.
Step 3:
Continue the dough
Dust the work surface with flour. Remove the dough from the mixer bowl. If it seems to be too sticky then add a little more flour. Knead it with your hands until it has an elastic consistency. Shape it into a ball, place it in a bowl, cover it with a towel and let it rise until it doubles in size.
Step 4:
Make into buns
After the dough has risen, remove the cloth from the bowl and sprinkle over a little flour. Punch the air out of the dough with your knuckles. Remove it from the bowl. Place it onto the surface and shape it into a log. Cut it into six pieces. Take one piece and shape it into a ball, by first folding the dough inwards then rolling it with the palm of your hand. Roll all the 5 remaining pieces into balls. Place them onto the pre-lined baking tray. Cover them once more with the towel. Let them rise again for about 30 minutes.
Step 5:
Preheat the oven
While you are waiting for the dough to rise, set the oven to 170ºC (325ºF/ or gas mark 3).
Step 6:
Wash and bake
Once your buns have doubled in size, uncover them. Brush the buns all over with the egg wash. Then using your knife, cut a deep cross into the centre of each bun. The deeper the cut, the more pronounced the cross will be when baked. Place them in the oven and let them bake for about 15 minutes, then remove.
Step 7:
Cool and serve
Let them cool for a few minutes and serve them hot or cold. But be warned, served warm with lashings of butter you could be up until midnight making more!

Peanut Butter Cupcakes

Ingredient for the cupcakes:
225 gm unsalted butter, softened
225 gm caster sugar
225gm self-raising flour
4 eggs
115 gm crunchy peanut butter

For icing:
60 gm crunchy peanut butter
50 gm unsalted butter, softened
2 tsp vanilla essense
115 gm icing sugar, sieved
2 tbsp milk

Instruction:
-Preheat the oven to 175 deg celsius
-Place 18 paper cases
-Combine butter, sugar, flour and eggs in a large bowl and beat with whisk until smooth for 2-3 min
-Stir in peanut butter until well combined
-Spoon batter into cases
-Bake for 20 min
-Cool them on rack

-Combined peanut butter, butter and vamilla in a medium bowl
-Whisk until light and fluffy
-Add icing sugar along with milk, beat until well combined
-Swirl the icing onto the cooled cupcakes

I've baked more than 5 cheesecakes lately and today, I've baked another 2. hohoho...I love the texture and Ben loves to eat it. I know you will wonder

1. Why am I baking so many funny things(food)?
2. Who is going to finish them?

Well, I am not telling you the answers, if you wanna try them, call me!

Recipe extracted from "Diana's Dessert"

Ingredients:

140g/5 oz. fine granulatd sugar
6 egg whites
6 egg yolks
1/4 tsp. cream of tartar
50g/2 oz. butter
250g/9 oz. cream cheese
100 ml/3 fluid oz. fresh milk 1 tbsp. lemon juice
60g/2 oz. cake flour /superfine flour
20g/1 oz. cornflour (cornstarch) 1/4 tsp. salt

Instructions:
1. Melt cream cheese, butter and milk over a double boiler. Cool the mixture. Fold in the flour, the cornflour, egg yolks, lemon juice and mix well.

2. Whisk egg whites with cream of tartar until foamy. Add in the sugar and whisk until soft peaks form.

3. Add the cheese mixture to the egg white mixture and mix well. Pour into a 8-inch round cake pan (Lightly grease and line the bottom and sides of the pan with greaseproof baking paper or parchment paper).

4. Bake cheesecake in a water bath for 1 hours 10 minutes or until set and golden brown at 160 degrees C (325 degrees F).

Makes 1 (8-inch) cheesecake, 12 servings.

Ang Gu Kueh 红龟糕

I know many people are saying I am crazy as now my blog has become a food blog! Hahaha.. It was about 1 year ago since I started to fall in love with Ang Ku Kueh. During the lunch break at work, I don't mind walking all the way to Everton Park to get my Ji Xiang AKK and I would buy back at least 40 pieces of them. You think I crazy ha? Some were for my colleagues of cause! I stop going there nowadays as I consolidate the order from other dept colleagues and get Ji Xiang to deliver them to NHC, min order :100 pieces. Here are some of my work today..

9 Layer Kuih 九层糕

Some called it Kuih Lapis, some call it 9 layer kuih. My first attempt was a big failure and ended up in the dusbin after a few hours. Why? I used the wrong ingredient! I actually used glutinous rice flour as RICE FLOUR so my 九层糕 didn't have any "层" . Need me to elaborate further? Okay, they all stick together like glu.... *rolling eyes* BUT, I tried it again this morning and Voila~ I've got my very nice 九层糕 - Mummy's Favourite!

Ingredients:

150g rice flour
30g green bean flour
30g glutinous rice flour
500 ml coconut milk

For the syrup
120g castor sugar
150ml water
1/4 tsp salt
1/2 tsp pandan paste
A few drops red colouring

Method:

Combine sugar, water in a saucepan. Bring to a boil to dissolve the sugar. Strain and set aside to cool.

Put rice flour, glutinous rice flour and green bean flour into a large mixing bowl. Pour in coconut milk gradually and leave aside to soak for 40–45 minutes.

Add salt to the rice flour and mix well.

Stir in syrup.

Strain the batter to ensure it is free from lumps.

Measure 16 fl ozs batter and add in the pink coloring . Measure another 16 fl ozs batter and add in the pandan paste which will be green. The remaining batter will be red.

Place a greased 8 inch tray in the steamer and heat up for 4–5 minutes.

Pour half cup(4 fl ozs) of the green batter on the heated tray. Cover and steam over medium heat for 5–6 minutes or until set.

Pour half cup of the pink batter over the green layer and steam covered for 5 minutes.

Repeat the procedure, alternating green and pink batter until all the batter is used up. Lastly, the final layer which is red.

After the final layer is set, steam the kuih for a further 12–15 minutes. Halfway through open the lid to release the steam, then cover again until the end of the steaming process.

Cool the kuih thoroughly before cutting into small diamond-shaped pieces.

I've no idea why am I so into baking and cooking these days... Here you are, a very special pork roasted by me with little help of mummy. Mummy is very good in cooking and baking. She taught me a lot and I have to say many sorries as I am not sharing our very own secret recipe. No jokes oh..I am selling this fellow at S$20/kg. They are so pretty and nice to be eaten, I thought it would be easy to make but I failed my first attempt - too hard. Not too happy with my second attempt too - too soft!

No way I am going to let go this time...I'll try again coming week!

Ondeh Ondeh Part 1

Some called it Onde Onde and some called it "oneh oneh". I've never like gula melaka and this is the first time I make Ondeh Ondeh. Mum was helping me with the ingredient preparation and Ben was busying snapping.

Our Recipe

-200gm of sweet potato(steamed and mashed)
-250gm of glutinous rice flour (shifted)

Mix (B)
-Pinch of salt
-50mls of water
-1 tbsp of tapioca flour

Filling
-150gm of gula melaka

Combine

-Coconut(grated)

-Pinch of salt

First, prepare ingredient B. Some will advise to boil them in a pot but to me, need not boiled water, can gradually add hot water into the bowl with flour, remember to stir it till it is transparent.

Then, add ingredient B(bit by bit) into the glutinous rice flour follow by mashed potatoes. mix them well until it forms a dough. Do take note: if you feel it is too wet, add more glutinous rice flour. If it is too dry, add a little ingredient B.

Roll the pieces of dough into small balls (ping pong ball sized)with your palms. Then flatten the ball and put a bit of the grated gula melaka in the centre. Pinch to seal, then roll again into spheres.

Drop the balls into boiling water until they float to the surface.

Roll them with fresh grated coconut as coating.
